I'm always looking for healthy snacks to get my clients through the day but haven't had much luck. Most often, gluten free snack items are laden with corn, and lack protein, fiber or nutrients. I always promote nuts and seeds, but sometime the monotonous flavor is not enough to satisfy their "junk food" cravings.
This recipe is beyond easy because it's only 4 ingredients. Truth be told there is actually no chipotle in it, but if you feel so inclined, you can puree a pepper and soak the pumpkin seeds in the liquid for a half hour and then roast them. Smoked paprika is a seasoning that I find to be linear with chipotle, so that is where I came up with the false title.

2 cups pumpkin seeds
1 teaspoon olive oil
1-2 tablespoons smoked paprika (depending on preferred spiciness)
1 teaspoon sea salt (or more, as desired)
