Gluten Free Granola With Goji Berry And Coconut

Because of last week's breakfast cereal post, I felt a little inspired to provide my long awaited ridiculously easy granola recipe.  It requires very few ingredients but still tastes absolutely delicious.  Use whatever fruits, seeds and nuts you have readily available; however, make sure there is no added sugar to the dried fruit! I cannot stress enough how important it is that the dried fruit does not have any additives or preservatives.

P.S. This recipe has TONS of vegan protein and fiber!!!


yield: approximately 5 cups
prep time: 20 mins 

2 cups rolled oats, gluten free
1 cup chopped nuts (I used almond and pecan)
1 cup mixed seeds (I used sunflower, chia, hemp, flax, amaranth, millet)
1/4 cup coconut oil
1/4 cup maple syrup
1 teaspoon cinnamon
1/2 teaspoon sea salt
1 cup mixed dried fruits (I used shredded coconut and goji berries)


Turn oven on to 350 F degrees.  Mix together oats with nuts and seeds.  Warm coconut oil and mix evenly with maple syrup, cinnamon and salt.  Once all ingredients are combined, add to oat mixture, making sure that the wet ingredients are absorbed.  Line a baking sheet with parchment paper or foil and evenly distribute that granola mixture on the sheet.  Bake in the oven for 10 minutes, then take the granola out and stir it around making sure the outside edges don't burn.  Place the granola back in for another 10 minutes.  As soon as the granola comes out, add in the dried fruit and mix evenly.  Do not make the mistake of adding the fruit into the mixture before placing in the oven or the fruit will burn.   Allow granola to cool before storing.  I like to add a paper towel as a liner in the container to absorb potential moisture.  Granola will store for at least a week, up to 10 days.
