Sweet and Savory Almonds

As I mentioned in last week's post, I wanted to create some simple, yet delicious innovative alternatives to snack foods.  This recipe's combination of sweet and savory has the ability to really hit the spot for a spectrum of tastebud preferences!

The most important step is to ensure that the almonds are soaked for at least a half hour before roasting in the oven.  Also, glazing with a touch of olive oil will prevent the sugars from burning while roasting in the oven.

Feel free to use any other seed or nut (or meat/meat alternative) which is easily enhanced by this absurdly easy marinade!

  • 2 cups organic raw almonds

  • 1/2 cup liquid aminos, tamari, or low sodium soy

  • 1/4 cup organic maple syrup or raw local honey

  • 1 teaspoon olive oil

Combine soy and maple syrup and allow the almonds to soak for a half hour at room temperature.  Set the oven to 400 degrees.  Line a baking sheet with parchment paper.  After almonds are done soaking, drain liquid and drizzle olive oil over them, tossing to coat evenly.  Spread the almonds evenly over baking sheet and bake for 15-20 minutes, or until dark golden brown in color.  Allow to cool completely before serving.
