Ok, so, I admittedly went a little crazy with two back to back vegan cheese based recipes, but I'm not sorry.  Cashew cheese is a much more responsible option compared to antibiotic and hormone laden dairy that can wreak havoc on several metabolic functions.  Feeling bloated, gassy or plain old nauseous after indulging in this classic dip obviously isn't caused by the spinach or artichokes; it's the body's natural response to the cheese that we put on the cheese that we mix with other cheese.  More than 50% of the world's population is intolerant to dairy, yet we consume it despite the symptoms that indicate that we shouldn't.  Between poor quality options and prevalent intolerance, the harm seems to outweigh the taste, in my humble opinion.  ..

We should probably start with what jackfruit is, and then conclude with what you can supplement it with.  Jackfruit is  the largest tree fruit which is widely common in South/South East Asia.  It's an incredibly large, green, spiny fruit which isn't all that easy to come by due to it's origin.  I was fortunate enough (and shocked) to find a quarter of one freshly cut in a Shop Rite in upstate New York. I know Whole Foods generally carries it fresh, whereas, on Amazon, it can be found canned.  I will add that the fruit is loaded with vitamin B6, C and magnesium, but it's a little high in carb count if you are trying to mind your sugars.  The fruit is obviously low in fat and protein (3 grams per cup), so be sure to add some beans for protein if you are vegan.   ..

I'm fairly certain that "Buddha Bowls" are just a generic interpretation of a healthy "anything goes" dish.  I've seen them pop up all over NYC with varying bases, such as: quinoa, brown rice and mixed greens.  Buddha bowls are intended to be a convenient, easy, nutrient dense meal option for almost any time of the day.  Most items intended for the bowl are vegetable based, but meats and dairy can also find their way in.   Since I feel enough of my client base and audience consumes quite enough of those items on their own, I am providing a completely vegan option, to showcase how delicious meals can be without either of those food groups.   ..
